
In 1983, master sushi chef Shogo Noshi opened a small, 30-seat restaurant
called Noshi Sushi in the heart of Koreatown, Los Angeles.
At the time, Japanese-owned restaurants were extremely rare in the neighborhood.
But word quickly spread about Noshi Sushi’s large portions,
incredibly fresh fish, and unwavering commitment to authentic Japanese flavor.
With over 50 years of experience and a deep mastery of sushi preparation,
Chef Noshi earned a loyal customer base with his expert cutting technique
and personal attention to every dish.
Just two months after opening, the restaurant’s popularity soared —
and customers were lining up outside even before the doors opened each day.
In 1990, to accommodate the growing demand, Noshi Sushi moved
to its current location on Beverly Boulevard, expanding to over 100 seats.
While the space grew, the spirit remained the same —
a focus on tradition, generous portions, and honest, high-quality sushi.
Our chefs have continued to honor Japanese culinary tradition,
crafting each piece of sushi with care and consistency.
In response to frequent customer requests,
we expanded the menu to include popular items
such as the Spider Roll and our California Roll made with real crab meat.
Our original Spicy Tuna recipe, developed in-house,
has been recognized by many as the best in Los Angeles.
In addition to sushi, our homemade Tempura and Teriyaki dishes
have also become long-standing favorites among our guests.
Noshi Sushi has remained largely unchanged over the decades —
intentionally preserving the atmosphere, menu, and standards
that built our reputation from the beginning.
In 2009, after more than 15 years of working side by side with Chef Noshi,
the head chefs he personally trained took over operations of the restaurant.
These chefs, now the owners, continue to uphold the values
and recipes that Noshi Sushi was founded on —
maintaining authenticity while also introducing select new items
that reflect the evolving tastes of our guests.
We now offer seasonal specials and a curated selection of sake and craft beer,
personally chosen by our Certified Sake Sommelier to complement your meal.
Today, Noshi Sushi remains proud of its history
and committed to delivering traditional Japanese cuisine
in a welcoming and unpretentious setting.
